Winter's perfect comfort food, this soup was made by my Great Great Aunt Ethel, and passed down through many generations, and many soup seasons!
French Onion Soup is the perfect winter comfort food. The caramelized onions, rich beef broth with a hint of red wine and thyme, topped with melted cheese create a warm and satisfying dish that will warm you up on a cold winter day. The toasted baguette adds a delicious crunch to the soup, making it the perfect complement to the savory flavors of the broth. Aunt Ethel's French Onion Soup
Ingredients:
4 Tbsp Salted Butter
1oz. Olive Oil
8 Cups Sliced Sweet Onions
4 Cups Beef Stock
4 Cups Chicken Stock
2 Cups Meiomi Pinot Noir
1 Bayleaf
1.5 Tbsp Thyme
1 tsp Worcestershire
Salt & Pepper to taste
1 French baguette, sliced
Sliced Provalone Cheese
Instructions:
In a large pot or Dutch oven, melt the butter and olive oil over medium heat. Add the onions and cook for 30 minutes, stirring occasionally until the onions are caramelized and soft.
Pour in the beef stock, chicken stock, red wine, Worcestershire sauce, thyme, and bay leaf. Bring to a boil, then reduce the heat and simmer for 30 minutes.
Add salt and pepper to taste.
Preheat the oven to 350°F. Place the sliced baguette on a baking sheet and toast in the oven for 10 minutes or until golden brown.
Remove the bay leaf from the soup and ladle into oven-safe bowls. Top each bowl with a slice of toasted baguette and a slice of provalone cheese.
Place the bowls on a baking sheet and broil in the oven until the cheese is melted and bubbly.
Serve immediately and enjoy the warm and comforting flavors of this French Onion Soup.
This savory soup can be made ahead of time, and stored in glass jars in the refrigerator for about a week. A great option for those of us who do weekly meal-prep! Enjoy!
